Ingredients

  • 2 large eggs beaten
  • 3/4 cups cheddar cheese shredded
  • 3/4 cups hash brown potatoes
  • 1/2 cups ham cooked and chopped or sausage
  • 1/4 cups onions chopped
  • 2 tablespoons vegetable oil

Instructions

  1. Combine eggs and 1/2 cup of the cheese; set aside.
  2. In a medium hot skillet, cook potatoes, ham and onion in hot oil over medium-low heat for 8 minutes or until potatoes and onions are tender.
  3. Add the egg mixture to vegetables and ham in skillet.
  4. Cook, stirring occasionally until egg is cooked but still glossy and moist.
  5. Transfer to serving plate.
  6. Top with remaining cheese.
  7. Makes 1 serving
