Ingredients

  • 3 cups all-purpose flour
  • 1 package active dry yeast
  • 2 teaspoons salt
  • 1 1/4 cups warm water
  • 1/4 cup light molasses
  • 1 cup wheat germ
  • 1 cup carrots, finely shredded
  • 1/4 cup parsley, snipped
  • 1 egg

Instructions

  1. In a large mixing bowl, combine 2 cups of flour, yeast, and salt.
  2. Add warm water, molasses, oil, and egg to the dry ingredients.
  3. Beat at low speed on electric mixer for 1/2 minute.
  4. Scrape the sides of the bowl constantly.
  5. Beat for 3 minutes at high speed.
  6. By hand, stir in the remaining flour, wheat germ, shredded carrots, and snipped parsley.
  7. Turn the batter into a greased 2-quart casserole dish.
  8. Cover and let rise in a warm place until nearly doubled in size (about 45 to 60 minutes).
  9. Bake at 350°F (175°C) for 50 to 60 minutes.
  10. Cover loosely with foil after the first 20 minutes of baking.
  11. Remove from casserole dish as soon as done.
  12. Brush the top crust with melted butter or margarine if desired.
  13. Allow the bread to cool before slicing.
