Ingredients

  • 1/4 c. water
  • 1 envelope unflavored gelatin
  • 2/3 c. sugar
  • 2/3 c. vinegar
  • 2 tsp. celery seed
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2/3 c. vegetable oil
  • 8 c. finely shredded cabbage
  • 2 finely shredded carrots
  • 1 green pepper cut in thin strips
  • 1/2 c. finely chopped onions
  • 1/2 c. cold water

Instructions

  1. Soften the unflavored gelatin in 1/4 cup water.
  2. In a saucepan, mix sugar, vinegar, celery seed, salt, and pepper, then bring to a boil.
  3. Remove from heat and stir in the softened gelatin until dissolved.
  4. Allow the mixture to cool until slightly thickened.
  5. Beat the cooled mixture well.
  6. Gradually beat in the vegetable oil until fully incorporated.
  7. In a large bowl, combine shredded cabbage, carrots, green pepper strips, and chopped onions.
  8. Pour the dressing over the vegetables and toss to coat evenly.
  9. Chill before serving.
