Creamy garlic chive potatoes combine tender new potatoes with garlic, scallions, and cheese for a rich, flavorful side perfect for family dinners or special occasions.

Ingredients

  • 1 lb. new potatoes, quartered with skins on
  • 2 Tbsp. butter
  • 2 garlic cloves, minced
  • 2 scallions, diced fine
  • 1/2 c. buttermilk
  • 1/2 c. cream
  • 1 c. Montrachet cheese, crumbled fine
  • 1/4 c. garlic chives, minced
  • sea salt to taste

Instructions

  1. Place the potatoes in a large pot with enough water to cover and bring to a boil. Cook for 30 minutes or until potatoes are tender; drain and set aside.
  2. In a saucepan, melt the butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  3. Stir in the diced scallions and cook for another minute.
  4. In a bowl, combine the buttermilk, cream, and crumbled Montrachet cheese.
  5. Add the cooked potatoes to the saucepan with the garlic and scallions, then pour in the cheese mixture.
  6. Gently mash or stir to combine everything well, ensuring the potatoes are coated with the creamy mixture.
  7. Stir in the minced garlic chives and season with sea salt to taste.
  8. Serve hot, garnished with additional chives if desired.
