Ingredients

  • 6 oz. linguini
  • 2 whole boned and skinned chicken breasts
  • 1 small onion chopped
  • 4 cloves garlic minced
  • 1/2 tsp. dried basil
  • 2 Tbsp. butter
  • 1 medium zucchini sliced
  • 1 c. sliced mushrooms
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 (16 oz.) can chicken broth
  • chicken base (optional)

Instructions

  1. Cook the chicken breasts in boiling water until tender, then save the broth and cut the chicken into bite-sized pieces.
  2. Cook the linguini according to package directions, then drain and set aside.
  3. In a skillet, melt the butter and add the minced garlic, chopped onion, sliced zucchini, sliced mushrooms, dried basil, salt, and pepper. Saute until the vegetables are crisp tender.
  4. Add the chicken broth to the skillet and heat through.
  5. Stir in the cooked linguini and cook for another 2 minutes until well combined and heated through.
