Ingredients
- 1/3 cup olive oil ⓘ
- 1/2 green pepper, cubed ⓘ
- 1 medium onion, chopped ⓘ
- 1 medium peeled eggplant, cubed ⓘ
- 3 to 4 large cloves garlic, chopped ⓘ
- 6 oz tomato paste ⓘ
- 2 tablespoons wine vinegar ⓘ
- 1/2 cup sliced stuffed olives ⓘ
- 1 1/2 teaspoons sugar ⓘ
- 1/2 teaspoon oregano ⓘ
- 1 teaspoon salt ⓘ
- dash of pepper ⓘ
Instructions
- Saute in olive oil the cubed green pepper, chopped onion, cubed peeled eggplant, and chopped garlic for 10 to 15 minutes.
- Mix together tomato paste, vinegar, sliced stuffed olives, sugar, oregano, salt, and pepper; combine with the sauteed mixture.
- Cover and simmer for 20 to 30 minutes, stirring occasionally.
