Ingredients

  • 1/3 cup olive oil
  • 1/2 green pepper, cubed
  • 1 medium onion, chopped
  • 1 medium peeled eggplant, cubed
  • 3 to 4 large cloves garlic, chopped
  • 6 oz tomato paste
  • 2 tablespoons wine vinegar
  • 1/2 cup sliced stuffed olives
  • 1 1/2 teaspoons sugar
  • 1/2 teaspoon oregano
  • 1 teaspoon salt
  • dash of pepper

Instructions

  1. Saute in olive oil the cubed green pepper, chopped onion, cubed peeled eggplant, and chopped garlic for 10 to 15 minutes.
  2. Mix together tomato paste, vinegar, sliced stuffed olives, sugar, oregano, salt, and pepper; combine with the sauteed mixture.
  3. Cover and simmer for 20 to 30 minutes, stirring occasionally.
