Ingredients

  • 3 eggs
  • 2 cups sugar
  • 1 cup oil
  • 1 tablespoon vanilla
  • 2 cups coarsely grated zucchini
  • 2 cups sifted flour
  • 1 tablespoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 cup chopped walnuts

Instructions

  1. Beat eggs, sugar, oil, and vanilla until thick and lemon colored.
  2. Mix in grated zucchini, sifted flour, cinnamon, baking soda, and baking powder.
  3. Fold in chopped walnuts gently.
  4. Pour batter into two oiled and floured 8-inch loaf pans.
  5. Bake at 350°F (175°C) for 1 hour.
  6. Let cool in pans for 10 minutes, then turn out onto racks to cool completely.
