Ingredients

  • 3/4 cup unsalted butter
  • 1 cup sugar
  • 3 egg yolks
  • 1 teaspoon vanilla
  • 3/4 cup blackberry jam
  • 1/8 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1/2 cup wine or grape juice
  • 1 1/2 cups sifted flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon allspice
  • 1 cup nuts
  • 3 egg whites

Instructions

  1. Cream the butter and sugar until fluffy.
  2. Add egg yolks one at a time and mix thoroughly.
  3. Mix in the blackberry jam.
  4. Stir together buttermilk and soda.
  5. Add the buttermilk mixture to the creamed mixture.
  6. Sift together flour, salt, ground cinnamon, ground cloves, and allspice.
  7. Add the sifted dry ingredients to the mixture alternately with the wine or grape juice.
  8. Stir in the nuts.
  9. Carefully fold in the stiffly beaten egg whites.
  10. Pour the batter into a greased Bundt pan.
  11. Bake at 350°F until a toothpick inserted in the center comes out clean.
