German Wine Cake

Ingredients
- 3/4 cup unsalted butter ⓘ
- 1 cup sugar ⓘ
- 3 egg yolks ⓘ
- 1 teaspoon vanilla ⓘ
- 3/4 cup blackberry jam ⓘ
- 1/8 cup buttermilk ⓘ
- 1/2 teaspoon baking soda ⓘ
- 1/2 cup wine or grape juice ⓘ
- 1 1/2 cups sifted flour ⓘ
- 1/4 teaspoon salt ⓘ
- 1/2 teaspoon ground cinnamon ⓘ
- 1/2 teaspoon ground cloves ⓘ
- 1/2 teaspoon allspice ⓘ
- 1 cup nuts ⓘ
- 3 egg whites
Instructions
- Cream the butter and sugar until fluffy.
- Add egg yolks one at a time and mix thoroughly.
- Mix in the blackberry jam.
- Stir together buttermilk and soda.
- Add the buttermilk mixture to the creamed mixture.
- Sift together flour, salt, ground cinnamon, ground cloves, and allspice.
- Add the sifted dry ingredients to the mixture alternately with the wine or grape juice.
- Stir in the nuts.
- Carefully fold in the stiffly beaten egg whites.
- Pour the batter into a greased Bundt pan.
- Bake at 350°F until a toothpick inserted in the center comes out clean.
