  • 2 lb. navy beans
  • 4 to 5 qt. water

  • 1 to 2 cups cut up raw carrots

Instructions

  1. Soak navy beans overnight.
  2. Drain the soaked beans.
  3. Place all ingredients, including beans, ham bones, cooked ham chunks, garlic powder, thyme, pepper, bay leaves, parsley, chopped onions, and carrots, into a 5 to 6-quart crock-pot.
  4. Add water to fill to the top.
  5. Cover and cook on high for 6 to 8 hours or longer.
  6. After about 3 hours of cooking, mash the beans lightly to thicken the soup.
