Ginger Fig Cookies

Ingredients

  • 2 1/2 cups flour
  • 1 cup brown sugar (packed)
  • 1 Tsp baking soda
  • 1 1/2 Tsp ground ginger
  • 1 Tsp cinnamon
  • 1/2 Tsp ground cloves
  • 3/4 cup butter melted
  • 1/3 cup molasses
  • 1 egg
  • 1/2 cup rough chopped candied ginger (large pieces)
  • 1/2 cup quartered or halves dried figs

Instructions

  1. Preheat ove to 350
  2. Wisk together 1the flour, baking soda and spices in bowl and set aside. Blend Brown sugar, butter, molasses and egg and add blended flour mix till well combined. Stir in figs and ginger. Chill dough until firm.
  3. Roll cookie dough into balls and roll balls in grandulated sugar. Bake on parchment or greased cookie sheet for 12 - 14 minutes until little cracks appear cookies are done. Let cookies cool on baking sheets for a few minutes and transfer to cooling racks.
  4. If you like additional crunchiness you may sprinkle some sugar on warm cookies as they cool.
