Ingredients

  • 1 1/2 cups milk
  • 3/4 cup oats
  • 1 cup flour
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon cinnamon
  • 1/4 to 1/2 teaspoon ginger
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 beaten egg
  • 3 beaten egg whites
  • 2 tablespoons oil
  • 2 tablespoons molasses

Instructions

  1. Heat the milk over low heat until just hot, stirring occasionally. Stir in the oats and remove from heat. Let stand for 5 minutes.
  2. In a separate bowl, combine the flour, baking powder, cinnamon, ginger, baking soda, and salt.
  3. Beat the egg and stir it into the oat mixture along with the beaten egg whites, oil, and molasses.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour batter onto a hot, greased griddle or skillet and cook until bubbles form on the surface, then flip and cook until golden brown.
