Ingredients

  • 1 lb. lean flank steak
  • 1 Tbsp. peeled, minced gingerroot
  • 2 tsp. sugar
  • 2 Tbsp. low-sodium soy sauce
  • 2 Tbsp. sherry
  • 3 cloves garlic, minced
  • 2 tsp. dark sesame oil
  • 2 tsp. cornstarch
  • 1 Tbsp. rice vinegar
  • 1 tsp. rice vinegar
  • 2 c. cubed fresh pineapple
  • 1 c. diagonally sliced green onions
  • 1 c. thinly sliced fresh mushrooms
  • 1 c. fresh snow peas
  • 1 c. julienne-cut red bell pepper strips

Instructions

  1. Trim fat from the flank steak.
  2. Cut the steak lengthwise with the grain into 1/4-inch slices, then cut the slices in half crosswise.
  3. Combine the steak, minced gingerroot, sugar, soy sauce, sherry, minced garlic, dark sesame oil, cornstarch, and rice vinegar in a large zip-top heavy-duty plastic bag.
  4. Seal the bag and marinate in the refrigerator for 2 hours, turning the bag occasionally.
  5. Remove the steak from the marinade and discard the marinade.

Tips & Substitutions

For a tender result, slice the flank steak against the grain. If you don't have sherry, rice wine or even apple juice can be used as a substitute. To add a bit of heat, consider adding red pepper flakes or a splash of chili sauce to the marinade. This dish can also be made with chicken or shrimp for a variation on traditional Chinese recipes.

Serving Suggestions

Serve the stir-fry over steamed rice or quinoa for a hearty meal. It pairs beautifully with Low Calorie Beef With Peppers And Snow Peas for a delicious dinner spread. Garnish with additional green onions and sesame seeds for extra flavor and presentation. A side of steamed broccoli or a fresh salad complements this dish well.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm in a skillet over medium heat until heated through, adding a splash of water or broth to maintain moisture. Avoid microwaving for the best texture and flavor.

Frequently Asked Questions

Can I use a different cut of beef?

Yes, you can substitute flank steak with other cuts like sirloin or ribeye. Just ensure that the cut you choose is lean and tender. Adjust cooking times accordingly, as different cuts may require varying cooking durations.

Is it possible to make this dish vegetarian?

Absolutely! You can replace the beef with tofu or tempeh for a vegetarian version. Make sure to adjust cooking times to ensure the tofu is properly cooked and absorbs the flavors of the marinade.

Can I prepare the marinade in advance?

Yes, the marinade can be made a day ahead and stored in the refrigerator. This allows the flavors to meld and can save time on the day of cooking. Just remember to marinate the meat for at least 2 hours for optimal flavor absorption.
