Ingredients

  • 20 oz. crushed pineapple
  • 1 cup sugar
  • 1/4 cup all purpose flour
  • 1 tablespoon lemon juice
  • 1 tablespoon butter or margarine
  • 1/4 teaspoon salt
  • Pastry for double crust 9-inch pie
  • 3/4 cup flaked coconut
  • 1/2 cup confectioners sugar
  • 1/4 teaspoon vanilla extract

Instructions

  1. Drain the pineapple, reserving 1 tablespoon of juice for the glaze.
  2. In a medium bowl, combine pineapple, sugar, flour, lemon juice, melted butter, and salt; mix well and set aside.
  3. Line a 9-inch pie pan with the bottom pastry.
  4. Sprinkle the pastry with flaked coconut.
  5. Spread the pineapple mixture over the coconut in the pie shell.
  6. Cover with the remaining pastry, flute the edges, and cut slits in the top crust.
  7. Bake at 400°F (200°C) for 35-40 minutes or until golden brown.
  8. Cool for 20 minutes on a wire rack.
  9. Meanwhile, for the glaze, combine confectioners sugar, vanilla, and the reserved pineapple juice until smooth.
  10. Spread the glaze over the warm pie before serving.
