Ingredients

  • 4 tortillas
  • 8 oz. cooked chicken
  • 2 Tbsp. flour
  • 3 Tbsp. tomato ketchup
  • 2 c. skim milk
  • 2 Tbsp. onion flakes
  • 1 (4 oz.) can diced chilies
  • 1 tsp. salt
  • 2 chicken bouillon cubes
  • 1/2 c. canned sliced mushrooms
  • 4 oz. grated Cheddar cheese

Instructions

  1. Layer half of the tortillas and half of the cooked chicken in an 8 x 8-inch dish. Repeat.
  2. In a saucepan, combine flour, salt, chicken bouillon cubes, and tomato ketchup.
  3. Gradually blend in skim milk and heat, stirring constantly until thickened. Remove from heat.
  4. Stir in sliced mushrooms, diced chilies, and onion flakes; pour the sauce over the layered tortillas and chicken.
  5. Sprinkle grated Cheddar cheese evenly over the top.
  6. Cover the dish tightly with foil.
  7. Refrigerate for 24 hours.
  8. Bake, covered, at 300°F (150°C) for 1.5 hours.
