A hearty barley casserole with mushrooms and onions, baked to perfection with savory flavors, ideal for comforting family meals or vegetarian-friendly dinners.

Ingredients

  • 1/2 cup medium barley
  • 1 large onion, diced
  • 6 oz. mushrooms, diced
  • 3/4 cup chicken stock
  • 3 tablespoons margarine
  • garlic powder

Instructions

  1. Rinse the barley three times, then parboil for 1.5 hours. Rinse and drain the barley afterward.
  2. Sauté the diced onion in margarine until transparent.
  3. Add diced mushrooms to the onions and sauté until tender.
  4. Combine the cooked barley, sautéed onions and mushrooms, and chicken stock in a mixing bowl.
  5. Pour the mixture into a greased baking dish.
  6. Sprinkle garlic powder over the top.
  7. Bake at 350°F (175°C) for 45 minutes (3/4 hour).
