- Rinse the barley three times, then parboil for 1.5 hours. Rinse and drain the barley afterward.
- Sauté the diced onion in margarine until transparent.
- Add diced mushrooms to the onions and sauté until tender.
- Combine the cooked barley, sautéed onions and mushrooms, and chicken stock in a mixing bowl.
- Pour the mixture into a greased baking dish.
- Sprinkle garlic powder over the top.
- Bake at 350°F (175°C) for 45 minutes (3/4 hour).
