Ingredients

  • 2 Tbsp butter
  • 3 Tbsp flour
  • 2 cups chicken bouillon or 1 cup bouillon and 1 cup cream
  • 1 Tbsp minced parsley
  • 1/2 cup grated bread crumbs
  • 4 beaten egg yolks
  • 2 cups boiled, diced lobster meat
  • Salt and pepper to taste
  • 4 egg whites

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Melt butter in a saucepan.
  3. Stir in flour until blended.
  4. Gradually add chicken bouillon or 1 cup bouillon and 1 cup cream, stirring constantly.
  5. Add minced parsley, bread crumbs, beaten egg yolks, diced lobster meat, salt, and pepper.
  6. Whip egg whites until stiff but not dry.
  7. Gently fold whipped egg whites into the lobster mixture.
  8. Pour the mixture into a well oiled 9-inch ring mold.
  9. Bake until firm, about 20 minutes.
  10. Unmold and serve with Mushroom Sauce.
