Ingredients

  • 1 lb smoked sausage, sliced
  • 1 large onion, cut into short, thin strips
  • 2 large green peppers, cut into thin strips
  • 3 Tbsp vegetable oil
  • 1 (16 oz) can tomatoes and green chilies
  • 2 (16 oz) cans black-eyed peas, drained
  • 1 cup corn muffin mix
  • 1/4 tsp ground cayenne pepper
  • 2/3 cup milk
  • 1 beaten egg

Instructions

  1. Cook sausage, onions, and green peppers over medium heat in 1 tablespoon of vegetable oil until vegetables are tender and sausage is done.
  2. Stir in tomatoes and green chilies; reduce heat and simmer for 5 to 10 minutes.
  3. Pour the mixture into a lightly greased 13 x 9-inch baking dish.
  4. Prepare the cornbread topping by mixing the corn muffin mix, cayenne pepper, milk, and beaten egg until well combined.
  5. Pour the batter over the sausage and vegetable mixture in the baking dish.
  6. Bake in a preheated oven at 375°F (190°C) for about 20-25 minutes or until the topping is golden brown.
