Ingredients
- 3 whole chicken breasts, cooked and cut in bites
- 2 cups green grapes, seedless ⓘ
- 1 cup snow peas ⓘ
- 12 spinach leaves, torn ⓘ
- 1 large celery heart and leaves ⓘ
- 1 jar (6 oz.) artichokes with marinade ⓘ
- 1/2 large cucumber, sliced ⓘ
- 1/2 cup raisins ⓘ
- 1 green onion, chopped ⓘ
- 2/3 cup mayonnaise ⓘ
- 1/4 cup grated cheese or Parmesan ⓘ
- 1/3 cup fresh lemon juice ⓘ
- salt and pepper ⓘ
Instructions
- Combine cooked chicken, green grapes, snow peas, torn spinach leaves, celery and leaves, artichokes with marinade, sliced cucumber, raisins, and chopped green onion in a large bowl.
- In a separate small bowl, mix mayonnaise with fresh lemon juice, salt, and pepper to taste.
- Pour the dressing over the salad ingredients and toss gently to combine.
- Decorate the top with sliced kiwi and oranges before serving.
