Ingredients

  • 3 whole chicken breasts, cooked and cut in bites
  • 2 cups green grapes, seedless
  • 1 cup snow peas
  • 12 spinach leaves, torn
  • 1 large celery heart and leaves
  • 1 jar (6 oz.) artichokes with marinade
  • 1/2 large cucumber, sliced
  • 1/2 cup raisins
  • 1 green onion, chopped
  • 2/3 cup mayonnaise
  • 1/4 cup grated cheese or Parmesan
  • 1/3 cup fresh lemon juice
  • salt and pepper

Instructions

  1. Combine cooked chicken, green grapes, snow peas, torn spinach leaves, celery and leaves, artichokes with marinade, sliced cucumber, raisins, and chopped green onion in a large bowl.
  2. In a separate small bowl, mix mayonnaise with fresh lemon juice, salt, and pepper to taste.
  3. Pour the dressing over the salad ingredients and toss gently to combine.
  4. Decorate the top with sliced kiwi and oranges before serving.
