Ingredients

  • 2 c. flour
  • 1/2 lb. butter
  • 1 tsp. almond extract
  • 3/4 c. sugar
  • 1 egg
  • 3/4 c. ground pecans

Instructions

  1. Cream together butter, sugar, and egg until smooth.
  2. Mix in almond extract.
  3. Gradually add flour and ground pecans to the mixture and combine well.
  4. Form the dough into logs about 1 1/2 inches in diameter.
  5. Wrap the logs in wax paper and freeze until firm.
  6. Slice the logs into 1/4-inch thick slices.
  7. Place slices on a baking sheet lined with parchment paper.
  8. Bake at 350°F (175°C) for 7 to 10 minutes, watching carefully after 7 minutes to prevent burning.
  9. Remove from the cookie sheet immediately after baking and cool on a wire rack.
