Ingredients

  • day-old Portuguese bread
  • 2 eggs per bread used
  • 1/2 lb linguica per bread used
  • 1/2 onion per bread used
  • parsley
  • pepper
  • salt
  • vinegar

Instructions

  1. Fry linguica and onion in a small amount of oil until cooked and fragrant.
  2. Add chopped parsley and cook for another minute.
  3. Mix the cooked linguica and onion with torn day-old Portuguese bread.
  4. Beat eggs and pour over the bread mixture, stirring to combine.
  5. Season with salt, pepper, and vinegar to taste.
  6. Bake in a preheated oven at 350°F (175°C) until heated through and slightly browned on top.
