Ingredients

  • 2 2/3 c. cake flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 c. butter or margarine
  • 1 3/4 c. sugar
  • 4 eggs or equivalent egg substitute
  • 1 c. milk or skim milk
  • 2 tsp. vanilla extract
  • 1/3 c. oil
  • 1/2 c. peanuts or mixed nuts

Instructions

  1. Preheat oven to 350°.
  2. Sift together flour, baking powder, and salt. Set aside.
  3. Cream butter and sugar together.
  4. Add eggs to the creamed mixture.
  5. Combine milk, vanilla, and oil in a measuring cup.
  6. Alternate adding the flour mixture and milk mixture until the batter is blended.
  7. Process the fruit and nut mixture until small pieces.
  8. Fold the fruit and nut mixture into the batter.
  9. Bake in two 9-inch cake pans for 35 to 40 minutes or in a Bundt pan for 50 minutes.
