Ingredients

  • 1/4 cup flour
  • 1/4 cup Crisco
  • 3/4 cup onions, chopped
  • 3/4 cup bell pepper, chopped
  • 3/4 cup celery, chopped
  • 2 cans tomato puree
  • 2 cans diced tomatoes
  • 2 pounds raw shrimp, peeled
  • 6 cups instant rice
  • salt to taste
  • pepper to taste

Instructions

  1. In a large pot, melt Crisco and add flour, stirring until golden brown to make a roux.
  2. Add chopped onions, bell peppers, and celery; sauté vegetables for 5 to 10 minutes.
  3. Add tomato puree, diced tomatoes, seasonings, and water to the vegetables; simmer for one hour.
  4. Twenty to thirty minutes before serving, add peeled shrimp and simmer for five to ten minutes.
  5. Add instant rice to the pot and stir well.
  6. Turn off the stove and let stand for 10 minutes before serving.
