Ingredients

  • 1 Tbsp. olive oil
  • 1 lb. cubed chicken
  • 1 can (16 oz.) stewed tomatoes
  • 1 medium onion
  • 1/2 c. yogurt
  • 1 Tbsp. peanut butter
  • curry to taste (1/2 to 1 Tbsp.)
  • 1 1/2 tsp. cumin

Instructions

  1. Saute onion in olive oil in a heavy skillet.
  2. Saute chicken in the onion and oil until cooked through.
  3. Add stewed tomatoes, peanut butter, curry, and cumin to the skillet.
  4. Reduce the sauce until thickened.
  5. Serve over rice.
