Ingredients

  • 1 small head lettuce
  • 1 small cucumber, sliced
  • 1 or 2 tomatoes, cut as desired
  • 1 green pepper, cut into strips
  • 1 small onion, sliced
  • 4 scallions, chopped
  • 2 stalks celery, chopped
  • 6 radishes, sliced
  • 1/4 c. parsley, finely cut
  • 1/2 c. crumbled Feta cheese
  • Calamata or Greek black olives

Instructions

  1. Break the lettuce into small pieces and place in a large bowl.
  2. Add the sliced cucumber, cut tomatoes, green pepper strips, sliced onion or chopped scallions, chopped celery, sliced radishes, and finely chopped parsley.
  3. Pour enough dressing over the vegetables to lightly coat each piece.
  4. Garnish with crumbled Feta cheese, olives, and optional anchovies.
