Ingredients

  • 2 cups sugar
  • 1/2 cup strong black coffee
  • 1 1/2 cups oil
  • 4 eggs
  • 2 teaspoons cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cloves
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 3 cups plain flour
  • 1 cup raisins
  • 3 cups raw Granny Smith chopped apples
  • 1 cup chopped pecans

Instructions

  1. Mix sugar and eggs in a bowl.
  2. Beat the mixture until smooth and well combined.
  3. In a separate bowl, combine all dry ingredients: flour, cinnamon, allspice, cloves, nutmeg, salt, baking soda, and baking powder.
  4. Add the dry ingredients to the egg and sugar mixture alternately with oil and coffee, mixing well after each addition.
  5. Fold in raisins, chopped apples, and chopped pecans.
  6. Pour the batter into a greased baking pan.
  7. Bake at 350°F (175°C) for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool before frosting.
  9. Spread Cream Cheese Icing over the cooled cake.
