  • 3 to 5 chicken breasts
  • 1 medium onion
  • 3 Tbsp. margarine
  • 1 (10 oz.) can cream of chicken soup
  • 1 (10 oz.) can cream of mushroom soup
  • 1 3/4 c. green chili, chopped and drained
  • 1/2 c. chicken broth
  • 1 (12 oz.) pkg. corn tortillas
  • 1 lb. grated cheese (Cheddar, Jack or mixed)

Instructions

  1. Preheat oven to 325°F.
  2. Boil chicken breasts, then let cool and shred, saving the broth.
  3. Sauté chopped onion in margarine until slightly soft.
  4. Combine sautéed onion with cream of chicken soup, cream of mushroom soup, chopped green chilies, and chicken broth to make the sauce.
  5. Tear 6 tortillas into small pieces and cover the bottom of a 9x13-inch pan with them.
  6. Spread half of the shredded chicken over the tortillas.
  7. Pour half of the sauce mixture over the chicken and top with grated cheese.
  8. Repeat the layers with remaining tortillas, chicken, sauce, and cheese.
  9. Bake for 30 to 40 minutes until very hot, bubbly, and slightly browned.
