Ingredients

  • 1 lb. ground beef
  • 1 can cream of mushroom soup
  • 1 medium onion
  • 1 can enchilada sauce
  • 1 tsp. salt
  • 1 can chopped green chilies
  • 1 tsp. garlic powder
  • 1 tsp. oregano
  • 12 corn tortillas
  • cheese

Instructions

  1. Brown the ground beef with chopped onion, salt, garlic powder, and oregano in a skillet.
  2. Drain excess fat from the meat mixture.
  3. Add cream of mushroom soup, half of the enchilada sauce, and chopped green chilies to the meat.
  4. Layer corn tortillas in a baking dish, then spread a portion of the meat mixture over the tortillas.
  5. Repeat layering with remaining tortillas and meat mixture.
  6. Top the casserole with the remaining enchilada sauce and grated cheese.
  7. Bake at 350°F (175°C) for 30 minutes until bubbly and cheese is melted.
