  • 4 large green peppers
  • 1 large onion
  • 3/4 c. rice
  • 1/2 c. parsley
  • 1/3 c. olive oil
  • 2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. paprika
  • 1 c. diluted tomato sauce

  3. Add washed rice, parsley, salt, pepper, paprika, and olive oil to the onions and mix well.
  4. Fill each pepper with the rice mixture, only 3/4 of the way full.
  5. Place the filled peppers upright in a pan large enough to hold them.
  6. Pour tomato sauce into each pepper as much as it will hold, then add the remaining sauce to the bottom of the pan.
  7. Cover the pan and cook on medium fire until rice is tender, about 1 hour.
  8. Serve cold.
