  • 2 tablespoons chopped fresh parsley
  • 10 ounces frozen peas, thawed

Instructions

  1. Bring rice, water, and 1 teaspoon salt to a boil.
  2. Cover and reduce heat; simmer 20 minutes.
  3. Remove from heat and let stand 20 minutes.
  4. Beat together vinegar and mustard; beat in oil, then sugar, remaining 1/2 teaspoon salt, and pepper, stirring until sugar dissolves.
  5. Add cooked rice to the dressing and toss until well coated.
  6. Add diced celery, sliced green onion, chopped dill, chopped mint, and chopped parsley; toss again.
  7. Add thawed peas and toss again.
  8. Serve at room temperature.
