Ingredients

  • 5 strips bacon
  • 1/2 cup chopped onion
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 1 pound dried green split-peas
  • 1 large smoked ham hock
  • 7 cups water
  • 2 bay leaves
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • Toasted croutons

Instructions

  1. Fry bacon in a 5-quart pan until crispy.
  2. Remove bacon, drain excess fat, and save 1 1/2 tablespoons of bacon grease.
  3. Add chopped onion, chopped carrots, and chopped celery to the pan.
  4. Cook over medium heat for 3 minutes, stirring occasionally.
  5. Add dried green split-peas, smoked ham hock, water, bay leaves, salt, and pepper to the pan.
  6. Bring the mixture to a boil, then lower the heat and simmer covered for 1 1/2 hours.
  7. Remove the ham hock, cut off the meat, and return it to the soup.
  8. Crumble the cooked bacon and set aside.
  9. Garnish the soup with crumbled bacon and toasted croutons before serving.
