- Drain the chopped green tomatoes on paper towels for 10 minutes.
- In a saucepan, combine the drained tomatoes, 1 cup of brown sugar, and lemon juice.
- Simmer uncovered for 20 to 25 minutes or until thickened.
- Remove from heat and stir in lemon extract.
- Preheat oven and prepare a baking pan as needed.
- In a mixing bowl, beat softened butter with remaining 1 cup of brown sugar.
- Add flour, baking soda, and salt to the butter mixture and mix well.
- Stir in old-fashioned oats and chopped walnuts.
- Press half of the oat mixture into the bottom of a prepared baking pan.
- Spread the cooked tomato mixture evenly over the crust.
- Sprinkle the remaining oat mixture on top.
- Bake in a preheated oven at 350°F (175°C) for about 20-25 minutes until golden.
