Ingredients

  • 4 cups finely chopped green tomatoes
  • 2 cups packed brown sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon extract
  • 3/4 cup butter softened
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups old-fashioned oats
  • 1/2 cup chopped walnuts

Instructions

  1. Drain the chopped green tomatoes on paper towels for 10 minutes.
  2. In a saucepan, combine the drained tomatoes, 1 cup of brown sugar, and lemon juice.
  3. Simmer uncovered for 20 to 25 minutes or until thickened.
  4. Remove from heat and stir in lemon extract.
  5. Preheat oven and prepare a baking pan as needed.
  6. In a mixing bowl, beat softened butter with remaining 1 cup of brown sugar.
  7. Add flour, baking soda, and salt to the butter mixture and mix well.
  8. Stir in old-fashioned oats and chopped walnuts.
  9. Press half of the oat mixture into the bottom of a prepared baking pan.
  10. Spread the cooked tomato mixture evenly over the crust.
  11. Sprinkle the remaining oat mixture on top.
  12. Bake in a preheated oven at 350°F (175°C) for about 20-25 minutes until golden.
