Green Tomato Chutney
A tangy, sweet and spicy green tomato chutney with warming spices and raisins, perfect for adding depth to grilled meats, cheeses, or as a condiment.

Instructions
- Slice the green tomatoes thinly and layer them in a bowl with salt between layers.
- Leave the salted tomatoes overnight.
- The next day, rinse and drain the tomatoes.
- Put the drained tomatoes in a large pot with all remaining ingredients.
- Cook slowly, uncovered, until the tomatoes are tender and the vinegar is nearly absorbed, about 5 hours.
