Green Tomato Chutney

A tangy, sweet and spicy green tomato chutney with warming spices and raisins, perfect for adding depth to grilled meats, cheeses, or as a condiment.

Ingredients

  • 5 lb. green tomatoes
  • 1/2 lb. sliced onions
  • 1 lb. dark brown sugar
  • 1 Tbsp. ground cinnamon
  • 2 tsp. peppercorns
  • 1 Tbsp. allspice
  • 1 qt. vinegar
  • 1/4 tsp. cayenne pepper
  • 1 1/2 c. seedless raisins

Instructions

  1. Slice the green tomatoes thinly and layer them in a bowl with salt between layers.
  2. Leave the salted tomatoes overnight.
  3. The next day, rinse and drain the tomatoes.
  4. Put the drained tomatoes in a large pot with all remaining ingredients.
  5. Cook slowly, uncovered, until the tomatoes are tender and the vinegar is nearly absorbed, about 5 hours.
