Ingredients

  • 1/4 c. cracked wheat
  • 3/4 c. hot water
  • 2 c. chopped parsley
  • 1/4 c. chopped fresh mint
  • 1/2 cucumber, peeled and diced
  • 1 tomato, diced
  • 2 scallions, sliced thin
  • 3 Tbsp. lemon juice
  • 3 Tbsp. oil
  • 1/4 tsp. salt
  • olives (optional)

Instructions

  1. Soak the cracked wheat in hot water for about 15 minutes to soften.
  2. Drain well, squeezing out all moisture.
  3. Toss chopped parsley, mint, diced cucumber, diced tomato, sliced scallions, and soaked wheat together in a serving dish.
  4. Coat with lemon juice, oil, and salt, then mix well.
  5. Garnish with olives if desired.
  6. Chill the salad before serving.
