Ingredients

  • 12 thick slices fresh tomatoes or 1 large can Italian tomatoes
  • 2 packages frozen chopped spinach
  • 1 cup seasoned bread crumbs
  • 6 chopped green onions
  • 6 eggs
  • 1/2 cup melted butter
  • 1/4 cup Parmesan cheese
  • 1/4 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon thyme
  • 1 teaspoon MSG (optional)

Instructions

  1. Cook the frozen chopped spinach as directed on the package.
  2. Add seasoned bread crumbs, chopped green onions, slightly beaten eggs, melted butter, Parmesan cheese, Worcestershire sauce, salt, pepper, thyme, and optional MSG to the cooked spinach. Cook over low heat until eggs are set.
  3. Arrange the tomato slices in a single layer in a buttered 9 x 13-inch baking dish.
  4. Top the tomatoes with the spinach mixture.
  5. Bake at 350°F (175°C) for 15 minutes or until heated through.
