Ingredients

  • 8 oz. sliced bacon, diced
  • 1 cup onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup packed dark brown sugar
  • Pulverized, burned ends of grilled brisket (optional)
  • 1 cup barbecue sauce
  • 1/3 cup maple pancake syrup
  • 1/3 cup light corn syrup
  • 3 (28 oz.) cans pork & beans, drained
  • 2/3 cup beer or apple juice

Instructions

  1. Fry bacon until crispy.
  2. Add onions and peppers and cook until vegetables are crisp-tender.
  3. Stir in dark brown sugar, barbecue sauce, maple pancake syrup, and light corn syrup.
  4. Put the drained pork & beans in a 12 x 6 x 3-inch foil pan.
  5. Add bacon mixture, beer or apple juice, and pulverized burnt ends of grilled brisket if using.
  6. Stir to mix all ingredients.
  7. For grilling, set the pan on the grill over hot coals, cover, and cook for 40 to 60 minutes, stirring three times.
  8. For indoor baking, heat oven to 400°F, assemble as directed, cover with loose foil tent, and bake for 40 to 60 minutes, stirring three times.
