Ingredients

  • 1 1/4 lb. ground beef
  • 1 small onion, chopped
  • 1 small green pepper, chopped
  • 1 can whole kernel corn, drained
  • 1 can tomato soup
  • 1 can water
  • 1 Tbsp. chili powder
  • 1 box Jiffy cornbread mix

Instructions

  1. Brown the ground beef in a skillet, then mix in chopped onion and green pepper.
  2. Sauté for 5 minutes.
  3. Add drained corn, tomato soup, water, and chili powder. Simmer for 15 minutes.
  4. Pour the mixture into a casserole dish.
  5. Mix the Jiffy cornbread according to package directions and spoon over the casserole.
  6. Bake uncovered at 425°F (220°C) for 20 minutes or until the cornbread is golden brown.
