Ingredients

  • 1 lb. lean ground beef
  • 1 small onion, finely chopped
  • 1 tsp. salt
  • 1/2 tsp. chili powder
  • 1/8 tsp. pepper
  • 1 cup tomato juice
  • 1 (20 oz.) can green beans
  • 2 1/2 cups mashed potatoes
  • paprika

Instructions

  1. Brown ground beef with chopped onion, salt, chili powder, and pepper; drain excess fat.
  2. Place the cooked beef mixture in a 2-quart casserole dish.
  3. Pour tomato juice over the beef mixture.
  4. Drain the green beans and layer them on top of the beef mixture.
  5. Spread mashed potatoes evenly over the green beans.
  6. Sprinkle paprika on top of the mashed potatoes.
  7. Bake at 350°F for 35 minutes until heated through and lightly browned.
