Ingredients

  • 1 whole chicken
  • 1 green pepper, chopped
  • 1 medium onion, chopped
  • 3 stalks celery, chopped
  • 1 clove garlic, crushed
  • 2 cans whole tomatoes
  • 1 cup peanut butter
  • 4 tablespoons Tabasco
  • 1 can green chilies, chopped
  • 1 large can tomato sauce
  • 1 package fresh spinach, chopped
  • 1 cup whole peanuts
  • 1 package okra (optional)
  • 1 pound smoked sausage, cut into bite-sized pieces

Instructions

  1. Cook the whole chicken, remove meat from bones, and cut into bite-sized pieces.
  2. Saute chopped green pepper, onion, and celery in peanut or olive oil until tender.
  3. Add crushed garlic and cook for another minute.
  4. Stir in canned whole tomatoes, peanut butter, Tabasco, chopped green chilies, and tomato sauce.
  5. Simmer the mixture for 5 minutes.
  6. Add chopped fresh spinach, whole peanuts, and okra if desired, then cook for an additional 30 minutes.
  7. Stir in the cooked chicken and smoked sausage pieces, then heat through before serving.
