Ingredients

  • 2 c. buttermilk
  • 2 c. chicken stock
  • 1 large ripe avocado, peeled and sliced
  • 2 Tbsp. lemon juice
  • 2 Tbsp. salsa
  • 2 Tbsp. cilantro, chopped
  • salt and pepper to taste
  • 1 ripe avocado, peeled and diced

Instructions

  1. Place buttermilk, chicken stock, sliced avocado, lemon juice, salsa, and cilantro in a blender.
  2. Puree until smooth.
  3. Season with salt and pepper.
  4. Cover and refrigerate for 1 to 4 hours.
  5. Stir diced avocado into the soup.
  6. Ladle into chilled bowls.
  7. Garnish soup with chopped tomato and cilantro.
