- Shake rabbit pieces, several at a time, in a paper or plastic bag with flour, pepper, salt, and parsley.
- Saute onion and garlic in olive oil or butter in a heavy frypan until soft.
- Push the onions and garlic to one side of the pan, then brown the rabbit pieces on all sides.
- Pour in boiling water to cover the rabbit and rice.
- Add rice, seasoned salt, and paprika to the pan.
- Cover tightly and simmer for 20 minutes until rice is cooked and rabbit is tender.
