Gypsy Rabbit is a hearty, flavorful dish featuring tender rabbit pieces cooked with onions, garlic, and spices, served over rice for a comforting meal perfect for gatherings.

Ingredients

  • 4 lb. rabbit, cut up
  • 1/4 c. flour
  • pepper
  • salt
  • parsley
  • 1 c. white onion, chopped
  • 2 cloves garlic, sliced
  • 1 1/2 Tbsp. olive oil
  • 1 qt. boiling water
  • 1 c. rice
  • 1 tsp. seasoned salt

Instructions

  1. Shake rabbit pieces, several at a time, in a paper or plastic bag with flour, pepper, salt, and parsley.
  2. Saute onion and garlic in olive oil or butter in a heavy frypan until soft.
  3. Push the onions and garlic to one side of the pan, then brown the rabbit pieces on all sides.
  4. Pour in boiling water to cover the rabbit and rice.
  5. Add rice, seasoned salt, and paprika to the pan.
  6. Cover tightly and simmer for 20 minutes until rice is cooked and rabbit is tender.
