Ingredients

  • 1/2 lb beef, chopped
  • 1/2 lb pork, chopped
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 small can sauerkraut
  • 1 large onion, minced
  • 5 tsp shortening
  • beef bouillon water
  • 3 lb cabbage
  • 1 small can tomatoes

Instructions

  1. Core the cabbage and place it in enough water to cover.
  2. As the cabbage leaves wilt, cut off the leaves with a fork in one hand and a knife in the other.
  3. Drain the cabbage leaves.
  4. Trim the center vein of each leaf.
  5. Brown the minced onion in shortening.
  6. Add chopped beef, chopped pork (or all ground beef), seasonings, and cooked rice to the onion; mix well.
  7. Place the cabbage in a pot and cover two-thirds with water.
  8. Arrange sauerkraut on top of the cabbage.
  9. Pour tomato juice over the sauerkraut and cabbage.
  10. Cover the pot and cook slowly for about 1 1/2 hours.
