- Core the cabbage and place it in enough water to cover.
- As the cabbage leaves wilt, cut off the leaves with a fork in one hand and a knife in the other.
- Drain the cabbage leaves.
- Trim the center vein of each leaf.
- Brown the minced onion in shortening.
- Add chopped beef, chopped pork (or all ground beef), seasonings, and cooked rice to the onion; mix well.
- Place the cabbage in a pot and cover two-thirds with water.
- Arrange sauerkraut on top of the cabbage.
- Pour tomato juice over the sauerkraut and cabbage.
- Cover the pot and cook slowly for about 1 1/2 hours.
