Hearty stuffed cabbage rolls filled with seasoned ground beef and rice, simmered in tomato and sauerkraut for a comforting, flavorful meal perfect for family dinners.

Ingredients

  • 1 large head cabbage
  • 1 cup raw rice
  • 1 1/2 lb ground round
  • 1 large onion
  • 2 eggs
  • salt and pepper
  • 1 package sauerkraut
  • 2 cans tomato soup

Instructions

  1. Put the whole cabbage head in boiling water and boil for 10 minutes until the leaves begin to separate.
  2. Separate the cabbage leaves carefully.
  3. Parboil 1 cup of rice until it makes about 3 cups of cooked rice.
  4. Mix the cooked rice, ground round, grated onion, eggs, salt, and pepper to make the stuffing mixture.
  5. Stuff each cabbage leaf with the meat and rice mixture, then roll up and tuck in the ends.
  6. Place the cabbage rolls in a large pot, stacking them as needed.
  7. Mix the tomato soup and sauerkraut together and pour over the cabbage rolls.
  8. Cook on the stove on low heat for 2 hours until tender.
