Ham-And-Vegetable Couscous
Ingredients
- 1 3/4 cups water ⓘ
- 1/2 teaspoon dried basil ⓘ
- 1 cup uncooked couscous ⓘ
- 1 cup chopped honey-baked ham ⓘ
- 1/3 cup thinly sliced green onions ⓘ
- 1/4 cup grated Parmesan cheese ⓘ
- 1 (15.25-ounce) can no-salt-added whole-kernel corn, drained ⓘ
- 3 tablespoons water ⓘ
- 2 tablespoons lemon juice ⓘ
- 1 tablespoon extra-virgin olive oil ⓘ
- 2 teaspoons Dijon mustard ⓘ
Instructions
- Bring 1 3/4 cups water and basil to a boil in a medium saucepan, and stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff with a fork. Combine couscous, ham, green onions, cheese, and corn in a bowl; set aside.
- Combine 3 tablespoons water and remaining ingredients; stir well with whisk. Pour dressing over couscous mixture, tossing gently to coat.
