Ingredients

  • 1 c. water
  • 2 small potatoes
  • 1/2 c. mayonnaise
  • 1/2 c. plain low-fat yogurt
  • 1 small garlic clove
  • 1 tsp. curry powder
  • 1 tsp. dried dill weed
  • 8 oz. cooked ham
  • 1 (10 oz.) pkg. frozen peas
  • 2 small carrots
  • 1 medium onion
  • 1 rib celery

Instructions

  1. In a small saucepan, bring water to a boil.
  2. Add potatoes; simmer for 8 to 10 minutes until fork-tender.
  3. Drain potatoes and let cool slightly.
  4. In a bowl, combine mayonnaise, yogurt, minced garlic, curry powder, and dill.
  5. Add cooked potatoes, ham, peas, carrots, onion, and celery to the dressing.
  6. Toss gently to combine and serve chilled.
