Ingredients

  • 4 cups sliced cooked potatoes
  • 3/4 cup shredded carrots
  • 1.5 cups cubed cooked ham
  • 1 can cream of mushroom soup
  • 1/2 cup shredded cheese
  • 1/4 cup milk
  • 1 tablespoon chopped onion
  • pepper to taste
  • 3/4 cup soft bread crumbs

Instructions

  1. Layer half the sliced cooked potatoes and half the shredded carrots in a 2-quart casserole dish.
  2. In a bowl, stir together the cubed cooked ham, cream of mushroom soup, 1/2 cup shredded cheese, milk, chopped onion, and pepper.
  3. Pour half of the ham mixture over the layered potatoes and carrots.
  4. Repeat the layers with the remaining potatoes, carrots, and ham mixture.
  5. Combine the soft bread crumbs, 1/2 cup shredded cheese, and melted butter; sprinkle this mixture over the casserole.
  6. Bake uncovered at 350°F until heated through, about 45 minutes.
