  • 1 tsp. sugar
  • 1 Tbsp. cornstarch

Instructions

  1. In a wok or 10-inch skillet, heat 2 tablespoons of vegetable oil over medium-high heat until hot.
  2. Add the sliced ham and stir-fry until lightly browned, about 1 to 2 minutes. Remove to a plate.
  3. Add the remaining 2 tablespoons of vegetable oil to the pan. When hot, add zucchini, carrots, red bell pepper, and onion.
  4. Stir-fry until the onion is softened, about 3 minutes.
  5. Add water, cover, and cook for 2 to 3 minutes until carrots and red pepper are crisp-tender.
  6. Return the ham to the pan, then add soy sauce, dry sherry, minced garlic, ground ginger, sugar, and chicken broth.
  7. Mix the cornstarch with water to make a slurry, then add to the stir-fry.
  8. Cook and stir until the sauce thickens and everything is heated through. Serve hot.
