Hamburg Roll Potato

- Saute the chopped onion and crushed garlic lightly in hot drippings.
- Remove from heat and mix in the ground beef and lightly beaten egg.
- Soften the bread slices in water seasoned with salt, oregano, and pepper.
- Mix the softened bread with the beef mixture until well combined.
- Spread the beef mixture on a piece of waxed paper and sprinkle with dry bread crumbs.
- Turn the beef mixture out onto the crumbs and pat into a rectangle about 1/2-inch thick.
- Beat the mashed potatoes with minced parsley and spread over the meat rectangle.
- Roll up the meat by lifting the wax paper along the long side, forming a jelly roll.
- Carefully lift the roll into a greased shallow casserole dish.
- Top the roll with bacon strips if desired.
- Bake in a 350°F oven for 1 hour.
- Serve with mushroom soup or tomato sauce.
