Hamburg Roll Potato

Ingredients

  • 1 lb ground beef
  • 2 cups mashed potatoes
  • 1 medium onion
  • 1 small clove garlic
  • 1 tablespoon drippings
  • 1 egg
  • 2 slices bread
  • 1 teaspoon salt
  • 1/4 teaspoon oregano
  • 1/4 teaspoon pepper
  • 2 tablespoons dry bread crumbs
  • 1 tablespoon minced parsley
  • 3 strips bacon

Instructions

  1. Saute the chopped onion and crushed garlic lightly in hot drippings.
  2. Remove from heat and mix in the ground beef and lightly beaten egg.
  3. Soften the bread slices in water seasoned with salt, oregano, and pepper.
  4. Mix the softened bread with the beef mixture until well combined.
  5. Spread the beef mixture on a piece of waxed paper and sprinkle with dry bread crumbs.
  6. Turn the beef mixture out onto the crumbs and pat into a rectangle about 1/2-inch thick.
  7. Beat the mashed potatoes with minced parsley and spread over the meat rectangle.
  8. Roll up the meat by lifting the wax paper along the long side, forming a jelly roll.
  9. Carefully lift the roll into a greased shallow casserole dish.
  10. Top the roll with bacon strips if desired.
  11. Bake in a 350°F oven for 1 hour.
  12. Serve with mushroom soup or tomato sauce.
