A hearty vegetable chowder with ground beef, tomatoes, cabbage, potatoes, and mixed vegetables, perfect for warming up family dinners with rich, comforting flavors.

Ingredients

  • 1/2 lb. ground beef
  • 3 Tbsp. fat
  • 2 c. canned tomatoes
  • 1/2 c. diced celery
  • 2 c. sliced cabbage
  • 1/4 c. barley or rice
  • 7 c. water
  • 2 carrots, diced
  • 1 large onion, diced
  • 2 c. cubed potatoes
  • 2 c. frozen mixed vegetables

Instructions

  1. Brown the ground beef in fat in a large pot.
  2. Add all ingredients except potatoes and frozen vegetables to the pot with the browned beef.
  3. Simmer slowly for 1 hour.
  4. Add cubed potatoes and cook for 30 minutes or longer.
  5. Add frozen mixed vegetables and cook for another 20 minutes.
  6. Taste and add salt or more water as needed.
  7. Let the chowder sit overnight for better flavor development.
