Hamburger Chili-Basic@fund Raiser Dinner
Ingredients
- 30 lbs hamburger, lean ground ⓘ
- 4 tablespoons Crisco ⓘ
- 2 lbs onions, chopped ⓘ
- 2 lbs bell peppers
- 6 garlic cloves, minced
- 9 lbs vegetables ⓘ
- 3 quarts corn kernels
- 2 quarts chicken stock ⓘ
- 2 quarts water ⓘ
- 3 quarts tomato sauce ⓘ
- 2 cups cayenne powder ⓘ
- 14 cup ground cumin ⓘ
- 2 tablespoons black pepper ⓘ
- 3 tablespoons salt ⓘ
- 3 lbs cheddar cheese, grated ⓘ
- 3 lbs white onions, chopped ⓘ
- 5 lbs dry beans, cooked ⓘ
- 5 lbs spaghetti, cooked ⓘ
- 14 cup basil, garnish
- 3 cups sour cream, topping ⓘ
Instructions
- Brown hamburger in crisco, drain, set aside.
- Can substitute 19 lbs.
- fresh pork sausage for 1/2 the hamburger.
- Using same pot and drippings, saute onions until light brown, add peppers, garlic and cook 1 or 2 minutes.
- ADD all vegetables, chicken stock, 1/2 of water and sauce.
- Bring to a full boil covered.
- Reduce heat to a 5 or 6 bubble simmer covered.
- Add 1/2 of spices and simmer covered 1 hour.
- ADD remainder of all water, sauces, spices and simmer uncovered 30 minutes.
- Prepare garnishes of cheese, onions, cooked beans, cooked spaghetti, basil, sour cream and crackers.
- Serve chili with spaghetti on bottom and chili on top=2Way Chili.
- Serve chili with spaghetti on bottom, chili on top, cheese on top=for 3Way Chili.
- Serve chili with spaghetti on bottom, chili on top, chhese and onions on top=4Way Chili.
- Serve chili with beans on bottom, then spaghetti, chili, cheese, onions=5Way Chili.
- Add other garnishes as desired for fully "dressed chili".
