Ingredients

  • 2 1/2 cups elbow macaroni
  • 3 tablespoons butter or margarine
  • 1/2 cup minced onion
  • 2 teaspoons minced garlic
  • 1 pound ground beef
  • 8 ounces tomato sauce
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon oregano
  • 8 ounces Cheddar cheese, grated
  • 3 eggs
  • 3/4 cup milk

Instructions

  1. Cook the elbow macaroni until tender, then drain and set aside.
  2. In a skillet, melt butter over medium heat.
  3. Saute minced onion and garlic until tender.
  4. Add ground beef and cook, stirring, until browned.
  5. Drain excess fat, then stir in tomato sauce, salt, pepper, and oregano. Simmer for 5 minutes.
  6. Spread the beef mixture into the bottom of a greased 2-quart casserole dish.
  7. Toss cooked macaroni with grated cheddar cheese, then arrange on top of the beef mixture and pack down.
  8. In a bowl, beat eggs with milk and pour over the macaroni layer.
  9. Bake at 350°F (175°C) for 1 hour until set and bubbly.
